Definitely a place for a meat lovers. Described as an “ode to nature” following in the footsteps of the Argentine tradition of fire cooking — this new place from The Asado Club (at the Canal Saint Martin) and creators Sabrina Goldin and Stéphane Abby combines ancestral cooking techniques with top products of land & sea in their “extreme nudity”.

Strategically located in the Haut Marais, this ultra-raw hideout lures you in with its rustic décor of wood, rough walls, marble tables and leather benches, warmed up by industrial suspensions and plant details.

On the menu are delectable sharing dishes — seared, grilled and braised with hay, wood and herbs by Swedish chef David Kjellstenius (hailing from the iconic Au Passage) — which travel from terroir to plate from the ovens and grills used in all the cooking here, and which are visible from the dining room.

Each night, like moths to a foodie flame, locals and visitors descend into this experiential restaurant to savour meat, fish and fresh veggies cooked in beech wood: Salers rib steak, brilliantly candied lamb shoulder, or a farmhouse poularde demi-désossée are shared by two or three, preceded by small plates on the fly — each with their own distinct flavour, story and very, very precise sourcing. 

In the basement, more patrons mingle and sip nightcaps at La Mina — a cocktail bar lit by candlelight which boasts a seductive vibe and a super-intimate smoke room, where you can continue your evening ‘til late with interesting mixtures and a warm atmosphere. 

A classy affair for dinner with just enough edge to make it unique, this place also will delight with not only its very natural and cosy design, but also with the unexpected discoveries it offers to your taste-buds — the octopus with bergamot or a veal with an unexpected sauce, are the perfect cases in point. 

Perfect for: A cosy, carnivorous dinner with you friends and family — Carbón has something for everyone, but it’s one your vegetarian friends might want to take a rain-check on if they want to stick to their guns — there is a lot of good meat around. 

What to order: Take some MEAT (if you eat it, of course) — although you’ll also find some great fish and seafood dishes on its varied menu if you need the option.
